Bring a large pan of salted water to the boil. Add the broccoli (1 head) and cook for 3-4 minutes, until tender. Remove with a slotted spoon and set aside, keeping the water simmering.

Heat a large frying pan over a medium heat. Add a glug of olive oil, followed by the garlic and herb butter (2 tbsp), chilli flakes (1/2 tsp) (if using) and lemon zest (1). Cook for 1 minute, until fragrant, then add the broccoli back to the pan along with 2 tbsp of the pasta cooking water.

Add the penne (500 g) to the broccoli cooking water and cook for 9-11 minutes, until al dente. Drain, reserving about ½ cup of the pasta water.

Lightly mash the broccoli in the pan with the back of a spoon to create a rough sauce. Add the pasta, lemon juice, most of the cheese (80 g) and 2 tbsp of the reserved pasta water. Toss well until coated in a thick, glossy sauce, adding more pasta water if needed to loosen.

Season to taste with salt and pepper. Spoon into bowls and finish with the remaining cheese on top.
