Method

step 1
Place the salmon fillets (2) into the air‑fryer basket, drizzle with a little oil and season with salt and pepper. Cook at 200°C for 15 minutes, until just cooked through. Alternatively, preheat the oven to 220°C/200°C fan/gas mark 7 and bake the salmon for 15-17 minutes, until cooked through.
step 2
Meanwhile, bring a large saucepan of salted water to the boil. Add the sweet potatoes (500 g) and cook for 7-10 minutes, until fork‑tender. Remove with a slotted spoon and transfer to a large bowl.
step 3
Add the cooked salmon to the bowl and mash together with the sweet potatoes. Stir through the Cajun seasoning (2 tbsp) and dill (10 g), then season to taste. Shape the mixture into 8 fishcakes.
step 4
Tip the breadcrumbs (50 g) onto a plate and coat each fishcake evenly. Return to the air fryer, spray with a little oil and cook at 200°C for 15 minutes, turning halfway, until golden and crisp. Alternatively, transfer to the oven and cook for 15 minutes, until golden brown.
step 5
Re‑boil the saucepan of water. Add the green beans (200 g) and cook for 5 minutes, adding the peas (100 g) for the final minute, then drain.
step 6
Wipe the pan clean, then return the beans and peas and toss with the yogurt (2 tbsp) and lemon juice (1). Season to taste, then gently fold through the lettuce (2 heads).
step 7
Serve the Cajun fishcakes alongside the warm lemony greens.
