Preheat the oven to 200°C/180°C fan/gas mark 6.

Melt the butter (100 g) in a large saucepan over a medium heat. Stir in the flour (75 g) and cook for 1-2 minutes, until pale and nutty.

Gradually whisk in the lager (1 tin), followed by the milk (400 ml), until smooth. Bring to a gentle simmer and cook until thickened.

Remove from the heat. Stir through the cheese mix (1 bag), mascarpone (100 g), Dijon mustard (2 tsp) and bacon (2 packs) until melted and smooth. Season generously with salt and black pepper.

Meanwhile, cook the macaroni (500 g) in a large pan of salted boiling water for 6 minutes, until just al dente. Drain well.

Add the pasta to the sauce and mix thoroughly. Transfer to a large baking dish (approx. 33cm x 25cm).

Bake for 25 minutes until golden, bubbling and lightly crisp on top.
