Preheat oven to 200°C/180°C fan/ gas mark 6.

Bring a large saucepan of water to a boil. Par boil the new potatoes (1 kg) for 15 minutes, until slightly softened and the sweetcorn (2 packs) for 5 minutes.

Add the butter (1 pack) to a small pan, along with 1 tbsp olive oil, the lemon juice (1/2) and Cajun seasoning (1/2 tbsp).

Add the potatoes, sweetcorn and chorizo (1 pack) to a large baking tray pour over half the melted butter and toss to coat. Cook for 30 minutes, turning halfway.

Remove from the oven and add the seafood selection (2 packs) and remaining butter. Toss to coat. Cook for 8-10 minutes until the prawns are pink.

Remove from the oven, add the crab claws (1 pack) if using and garnish with parsley (1 handful) and lemon wedges (1). Serve with bread (as needed), if you like, to mop up all the butter sauce.
