Pre-heat the grill to medium-high. Lay the bacon (1 pack) on a wire rack set over a foil-lined tray. Grill for 5-6 minutes, turning halfway, until crisp.

Toss the bread (3 slices) into the residual bacon fat in the tray, along with 1 tbsp of olive oil (1 tbsp) and a pinch of salt and pepper. Season and return to the grill for 3-5 minutes, until golden, watching closely so it doesn’t burn.

Cut the summer tomatoes (1 pack) and tiger tomatoes (1 pack) into a mixture of chunks, quarters and diagonal wedges, so you have a variety of shapes. Place in a bowl with the remaining extra virgin olive oil (1 tbsp) and a pinch of salt.

Mix the campfire mayo (3 tbsp) with the lemon juice (1/2).

Add the lettuce (2 heads) to a large serving platter and top with the tomatoes. Tear the bacon over the salad and scatter with the croutons. Drizzle over the dressing and scatter over the chives (15 g).
