Preheat the oven to 220°C/200°C fan/gas mark 6.

Cut the cabbage (1) into quarters and arrange on a baking tray. Drizzle with oil and season with salt and pepper. Roast for 20 minutes until charred at the edges and tender in the middle.

While the cabbage wedges are roasting, add a splash of oil to a deep sauté pan. Add the onions (2) with a pinch of salt and cook for 7-10 minutes, until soft and sticky. Stir in the chopped tomatoes (1 tin), harissa (2 tsp), cumin (1 tsp), coriander (1 tsp) and beans (1 tin) with their water. Refill the chopped tomato can half full with water and add this too. Season with salt and pepper. Simmer for 15 minutes, until reduced.

While the cabbage is cooking and the beans are blipping away, add the tahini (50 g), boiling water (50 ml) and garlic (2 cloves) to a food processor. Blitz until velvety, adding a splash more water if needed so it can be drizzled.

Nestle the cabbage wedges in the tomato sauce, then drizzle with the tahini. Finish with some fresh parsley (5 g).
