Pop the potatoes (550 g) in the microwave on medium power for 8-10 minutes, until soft in the middle. Allow to cool slightly.

Meanwhile, thinly slice half of the red onion (1) and add to a large bowl with the lemon juice and zest (1) and a pinch of salt. Set aside. Roughly chop the remaining onion.

Add the chopped onion, chickpeas (1 tin), harissa (2 tsp), half of the coriander (2.5 g), the cumin (1 tsp) and flour (115 g) to a food processor. Season with salt and pepper. Roughly blitz, then stir in the flesh from the sweet potatoes and mash.

Spoon tablespoons of the mixture onto a greaseproof-lined air fryer tray (it will still be fairly wet at this stage). Spray all over with the air fryer oil (as needed), then air fry for 20 minutes at 180°C, turning halfway, or until golden brown.

While the falafels are cooking, add the shredded cabbage (1/2) to the bowl with the quick-pickled onions. Season with salt and scrunch together with your fingers. Drizzle with a little olive oil. Stir through the remaining coriander (2.5 g).

Toast the pitta breads (4) and serve filled with the falafel, slaw and tzatziki (100 g).
