Using a speed peeler, create two long strips of lemon speed (1).

Add the gin (60 ml), cordial (30 ml) and 30ml of lemon juice to a cocktail shaker with plenty of ice. Shake until nice and cold and then strain into two coupe glasses.

Top up with the cloudy rosé (180 ml) and a dash of soda water (to taste) to bring the bubbles, and garnish with the lemon peel.
