Roughly chop half of the red onion (1/2) and set the rest aside.

Add the chopped onion, red pepper (1), garlic (2 cloves) and half of the parsley (12.5 g) to a blender and blitz until smooth.

Preheat the oven to 220°C/200°C fan/gas mark 7.

Heat a large frying pan over medium heat with a little olive oil. Add the beef mince (500 g), break it up with a spoon, then add the pepper mixture, smoked paprika (1 tbsp). cumin (2 tbsp) and tomato purée (4 tbsp). Cook for 6-8 minutes, until most of the liquid has evaporated and the mince is just cooked through.

Put the pizza bases (2) on two greaseproof-lined baking trays. Spoon over the beef mixture, spreading it to the edges and leaving a crust. Bake for 12 minutes until the beef is golden and the bases are crisp.

Thinly slice the remaining onion (1/2) and toss with the juice of 1 lemon (1) and a generous pinch of salt.

Top the baked flatbreads with the lemony onions, remaining parsley (12.5 g) and pepperoncini (5). Drizzle with yogurt (as needed) and serve with the remaining lemon (1), cut into wedges.
