Melt the butter (50 g) in a saucepan over a medium heat. Add the onion (1/2) and cook gently for 6-8 minutes until soft.

Add the garlic (1 clove) to the pan and cook for 30 seconds. Add the flour (60 g) and cook for 1-2 minutes, stirring constantly. Lower the heat to low.

Gradually whisk in the milk (280 ml) and continue to cook, whisking to form a thick smooth bechamel; this should take 4-5 minutes. You know it will be ready when it starts to pull away from the sides of the pan, and it holds its shape. Leave to cool slightly for 5 minutes.

Add the ham (60 g), chorizo (40 g), gruyère (40 g), smoked paprika (1 tsp) and parsley (5 g) to the pan and season to taste.

Spread the mixture into a shallow dish, cover, and chill for at least 2 hours (or overnight) until firm.

Scoop out the chilled mixture and shape into 16 cylinders.

Set up a bowl of flour (50 g), a bowl of beaten egg (2) and a bowl of breadcrumbs (80 g) mixed with crushed tortillas (100 g).

Roll each croquette in flour, then egg, then the breadcrumb mix, pressing gently so the coating sticks, Chill in the fridge 20-30 minutes.

Preheat the air fryer to 190°C. Lightly spray the croquettes with air fryer spray (as needed) and cook for 10-12 minutes, turning halfway, until golden brown and crisp.

Toss the salad (1 pack) with the dressing (3 tbsp) and serve alongside the croquettes and a dollop of aioli (to taste) for dunking.
