Heat a large frying pan over a medium-high heat with 1 tsp of neutral oil. Season the steaks (2) with salt and pepper and cook for 2-3 minutes on each side. Add the cowboy butter (25 g) in the final minute and baste the steak by repeatedly spooning over the melted butter – this will create a deliciously crispy crust and tender meat.

Add the mixed beans (1 jar), avocado (1), onion (1), sweetcorn (1 tin), pepper (2), coriander (25 g), olive oil (1 tbsp), lime juice (2) and Cajun seasoning (1 tbsp) to a large mixing bowl. Mix well and season to taste with salt and pepper.

Serve the cowboy caviar with your buttery steak, with a handful of pea shoots (1 handful), and some tortilla chips (1 handful), if you’d like.
