Preheat the oven to 200°C/180°C fan/gas mark 6. In a small bowl, whisk together the sriracha (3 tbsp), soy sauce (1 1/2 tbsp), maple syrup (1 1/2 tbsp) and sesame oil (1 1/2 tbsp). Arrange the chicken thighs (4) in a shallow tray and spoon over the sauce. If you have time, allow to marinate for 1 hour, covered, in the fridge – but don’t worry if not, they’ll still taste amazing.

Tip the chicken along with the marinade into a roasting tray, skin-side up. Bake for 45 minutes, until the skin is golden and the chicken is cooked through.

Meanwhile, make the slaw. Add the carrots (2), cabbage (1/4), edamame beans (80 g), nuoc cham dipping sauce (2 tbsp) and lime juice (1) to a mixing bowl and mix well. Season to taste with salt and pepper. Serve the chicken in the milk buns (4) piled high with the slaw.
