Cook the peas (300 g) according to pack instructions. Drain and mash with the mint (1 tsp) and crème fraîche (1 tbsp).

Place a large saucepan of salted water over a high heat and bring to the boil. Add the spaghetti (320 g) and cook for 8 minutes, then drain in a colander, reserving a splash of paste water and set aside.

In a large heatproof bowl, mix together the mashed peas, splash of reserved pasta water feta (125 g), lemon zest (1), chilli (1) and mint (3 sprigs) (reserving a little to garnish). Add the cooked and drained hot pasta to the bowl and toss through the mix to coat.

Divide the dressed pasta between four serving bowls, drizzle with a little extra virgin olive oil and scatter with the reserved mint to serve. Then season with salt and pepper.
