Christmas pudding recipe

Recipe

5.0

1 rating
Rich with brandy-soaked vine fruits, dark stout and warming spice, this traditional Christmas pudding recipe is worth the wait. The long steam gives it a beautifully dense, moist texture, while a final feed of brandy helps deepen the flavour as it matures. Make it well ahead of the big day, then reheat and serve with plenty of cream, custard or brandy butter for a classic festive finale.

Author's notes

This takes 6 hours to make, plus 2 hours' steaming on Christmas day

Method

step 1
Soak the sultanas (120 g), raisins (110 g) and mixed peel (15 g) in the brandy (60 ml) and sherry (100 ml) for at least one hour, ideally overnight.
step 2
Add the grated apples (40 g), glacé cherries (25 g), stout (75 ml) and brown sugar (80 g) to the soaked fruit, then add the egg (1).
step 3
Mix the suet (60 g), slivered almonds (50 g), breadcrumbs (30 g), flour (50 g) and mixed spice (1 tbsp) in a separate bowl, then stir into the wet ingredients.
step 4
Brush a 16cm pudding basin with sunflower oil, then line the base with a disc of greaseproof paper. Mix the pudding batter, then scrape into the basin and place another disc of greaseproof paper directly on top of the mixture. Cover the basin with a double layer of greaseproof paper and foil, securing tightly by tying string below the rim.
step 5
Put the pudding basin into a large saucepan. Fill the pan with boiling water halfway up the basin, then cover with a lid and steam for 4-5 hours over a low heat. Check the water level every 30 minutes, topping up with boiling water as required. After 4 hours, insert a metal skewer into the centre of the pudding – if cooked, it should come out clean; if not, keep steaming the pudding.
step 6
Once cooked through, take the pudding off the heat, remove the string, discard the greaseproof and foil, and leave the pudding to cool.
step 7
Once cool, feed the pudding with 20ml brandy. Cover with fresh greaseproof paper, foil and string and store in a cool, dry place until Christmas Day.
step 8
When ready to reheat, steam the pudding for 2 hours, or microwave on full power for 3 minutes, rest for 2 minutes, then heat for a further 2 minutes. Allow to stand for 2 minutes before serving.
step 9
If you’d like to flame the pudding, pour 2 tbsp of brandy into a metal ladle and warm the bottom of the ladle over a stovetop flame. Carefully ignite the warm alcohol and carefully pour the flaming liquid over your pudding.
step 10
Serve with plenty of cream (as needed) or brandy butter.
