Preheat the oven to 180°C/160°C fan/gas mark 4.

Place the sweet potato strips (3) on a baking tray, drizzle with olive oil, season with salt and pepper and roast in the oven for 20 minutes.

In a large frying pan, heat 1 tbsp olive oil over a medium-high heat and fry the onion (1) for 2-3 minutes, until soft.

Add the kidney beans (2 tins) and stir fry for 1-2 minutes before adding the salsa (3 tbsp) and 100ml water to the pan.

Simmer for 5 minutes, then add the coriander (15 g) and the lime juice (1).

Heat the tacos (1 pack) and spread each with ½ tbsp chimichurri (4 tbsp), then layer the beans mixture, lettuce (1) and smashed avocado (1) on top.

Finish with the grated cheese (80 g) and serve with the sweet potato fries.
