Preheat the oven to 220°C/200°C fan/gas mark 7. Line a large (35m x 40cm) baking tray with greaseproof paper, then sprinkle over the polenta (1 tbsp).

To make the sauce, heat a splash of oil in a small saucepan over a medium heat. Add the tomato paste (2 tsp) and cook for 1 minute, then stir in the chopped tomatoes (1 tin) with a pinch of salt. Simmer for 10 minutes until reduced slightly.

Meanwhile, combine the flour (500 g), baking powder (1 tsp) and salt (1 tsp) in a large bowl, then stir in the olive oil (3 tbsp), yogurt (300 g) and water (50 ml) and mix to bring together, first with a spoon then with your hands.

Knead very briefly on a floured work surface to help the dough form, then roll out into a rectangle shape the same size as the tray. Pop onto the parchment paper then top with the tomato sauce and tear over the mozzarella (1 pack).

Bake for 15 minutes, until golden and bubbling. Finish with a scattering of fresh basil leaves (5 g).
