Put the turkey mince (500 g), curry paste (2 tbsp), lemongrass (1 stalk), coriander (15 g) and salt (1/2 tsp) into a bowl and mix well. Shape into 4 even patties, then lightly coat in the cornflour (40 g).

Heat the air fryer to 200°C. Add the patties and cook for 10-12 minutes, turning halfway, until cooked through and golden.

Meanwhile, mix the peanut butter (2 tbsp) with the lime juice (1) and boiling water (2 tbsp) until smooth. Add the slaw (1 pack) and chilli (1) and toss to coat. Season to taste with salt.

Stir the remaining curry paste (1 tbsp) into the mayo (2 tbsp). Split the rolls (1 pack), spread with the curry mayo, then fill with the burgers and a generous pile of slaw.
