Preheat the air fryer to 180°C. Spread the chicken (1 pack) evenly in the air fryer basket in a single layer. Cook for 12 minutes, turning halfway through cooking.

While the chicken is cooking, in a deep-lidded pan, add a drizzle of olive oil and fry the onion (1) and peppers (2) for 4-5 minutes. Add the garlic (3 cloves) and cumin (1 tsp) and cook for a further minute.

Dissolve the stock pot (1) in the boiling water (900 ml)

Stir in the tomato paste (80 g) and the rice (300 g). Add the chicken stock, stir, then bring to a gentle boil before reducing the heat, popping a lid on and simmering for 15-18 minutes, stirring occasionally to prevent the rice from sticking.

Preheat the oven to 180°C/160°C fan/gas mark 4. When both the rice and chicken have about 8 minutes left, cook the garlic bread (1 pack) in the oven for 6-8 minutes, according to the pack instructions.

To make the salsa, add the cucumber (1/2), red onion (1), sweetcorn (100 g), coriander (1 handful), lime juice (1) and a generous pinch of flaky salt (as needed) and mix together well.

Serve the chicken with the rice, cucumber salsa, garlic bread and a drizzle of the mango hot sauce (to taste).
