Pour the focaccia mix (1 pack) into a bowl and add 400ml water. Combine to make a sticky dough.

In a clean bowl, add half the olive oil (10 ml) and add the dough then cover and rest for 1 hour.

After an hour, gently stretch and fold the dough four times and cover. Repeat the folding process 2 more times, resting 1 hour in between each set of folds. Using olive oil to avoid sticking.

Place the dough in a 30 x 20cm tray greased with olive oil (10 ml) and carefully push it into the corners. Leave in the tray to prove for a further 45 minutes until very puffy, airy and jiggly.

Preheat the oven to 220°C/200°C fan/gas mark 7.

Dimple the dough gently with oiled fingers and bake for 6-8 minutes. Add the top dogs (4) to the dough lengthways and gently push in. Bake for 20-25 minutes until the sausages are cooked through and the focaccia is golden and risen. If the dough colours before the long dogs, cover loosely with foil.

Remove from the oven and top with the cheese (50 g) immediately. Allow to cool slightly before topping with pickles (to taste), mustard (to taste), campfire mayo (to taste) and Top That seasoning (to taste). Slice into 4 long hot dogs and serve.
