Pour the focaccia mix (1 pack) into a bowl and add 400ml water. Combine to make a sticky dough.

Add the olive oil (20 ml) cover and rest for 1 hour in a warm place.

Gently stretch and fold the dough twice in total (once after 1 hour, once after 45-60 minutes). Handle as lightly as possible, then cover and rest for 45-60 minutes.

Grease a 30x20 tray with olive oil and transfer the dough gently to not knock the air out. Rest for 20 minutes, then gently stretch to the corners and leave to prove for 45-90 minutes until very puffy, airy and jiggly.

Preheat the oven to 220°C/200°C fan/gas mark 7.

Dimple the dough gently with oiled fingers and bake for 6-8 minutes. Add the long dogs (1 pack) to the dough lengthways and gently push in. Bake for 20-25 minutes until the sausages are cooked through and the focaccia is golden and risen. If the dough colours before the long dogs, cover loosely with foil.

Remove from the oven and top with the cheese (50 g) immediately. Allow to cool slightly before topping with pickles (to taste), mustard (to taste), campfire mayo (to taste) and Top That seasoning (to taste). Slice into 4 long hot dogs and serve.
