Heat a small saucepan over medium-high heat and add the frozen berries (450 g), blood orange juice (100 ml) and honey (2 tbsp). Bring to a boil and allow to simmer for 5-7 minutes, until the berries have broken down. Mash lightly with a fork and remove from the heat. Stir through the chia seeds (3 tbsp) and allow to cool completely.

Meanwhile, add the oats (300 g), chia seeds (50 g), orange juice (500 ml), yogurt (200 g) and honey (2 tbsp) to a mixing bowl and mix well until combined. You may need an additional splash of orange juice to bring everything together. Pop into the fridge for 2 hours.

When you are ready to assemble, spoon the chia seed jam into the base of a trifle dish. Top with the overnight oats. If you’d like to pop this in the fridge overnight, stop here.

Just before serving, scatter over half the orange segments (2), half the pomegranate rubies (75 g), and half the granola (75 g).

Spoon over the remaining yogurt (300 g), then top with the remaining orange segments (2), pomegranate rubies (75 g), and granola (75 g). Serve immediately.
