step 1
Preheat the oven to 220°C/200°C fan/gas mark 7. Place the sweet potato fries (600 g) into a large baking tray in a single layer. Cook for 17 minutes, until golden brown and crisp.

When the sweet potato fries have 10 minutes left, add the ciabatta rolls (4) to the oven and bake for 5-10 minutes according to the pack instructions.

Meanwhile, make the rainbow slaw. Add the red cabbage (1/2), carrots (2), radishes (3) and lime juice (1) to a mixing bowl. Mix well and season with a pinch of salt. Toss through the punchy protein seed mix (2 tbsp).

Heat a large griddle pan over a medium heat. Brush the pan with oil, add the halloumi burgers (2 packs), and cook for 5 minutes on each side.

Toss the cooked sweet potato fries in the piri piri seasoning (1 tbsp). Halve the ciabatta rolls and spread mayo (4 tbsp) onto the bottom, if using. Top with the lettuce (1 head), halloumi burger and tomato (2), then place the burger lid on top. Serve with your sweet potato fries and rainbow slaw.
