A beautifully bronzed bird is the highlight of Christmas lunch. Here’s how to make this year’s feast your best yet

How to cook and carve your turkey

Show off your Christmas bird at its best with our easy-to-follow guide on cooking and carving a turkey. Watch the video for more turkey tricks or read our step-by-step

  1. Take your turkey out of the fridge the night before or first thing in the morning so the meat comes up to room temperature before cooking
  2. Always pre-heat your oven – we recommend to around 180 degrees/gas mark 4
  3. Remove the wishbone with a sharp knife – this makes removing the breast meat much easier when it comes to carving
  4. Coat the bird in lots of olive oil and salt and pepper and cook it upside down – this ensures the breast meat stays juicy and tender
  5. Cover with foil and roast according to size, turning for the last 30 minutes to crisp up the skin

Expert tip: Remember to cover your turkey with foil and let it rest after it’s cooked for at least 20-30 minutes as it will help enhance the flavour of this delicate meat.

Meet our turkey farmer

Meet our turkey farmer

Our exclusive Pembrokeshire Bronze free-range turkeys are reared by Justin Scale on his 400-acre family farm set into the windswept Pembrokeshire Coast National Park. The lush, free-draining pastures and temperate climate mean that his birds can forage freely on land that’s rich with clover, herbs and wildflowers. Justin’s turkeys are slowly grown to full maturity, which means their meat has a beautiful depth of flavour and richness you can really taste

Picking your turkey

Whether you’re having a large gathering or are catering for a more intimate festive celebration, M&S has the perfect turkey for you.

A whole, burnished bird with all the trimmings is a classic centrepiece come Christmas Day, but we have a host of other options if you prefer a smaller portion or something that little bit different.

If you prefer white meat, our crowns are the perfect solution. Available with a selection of stuffings and decorations – or plain so you can cook to your own taste – they feed from four to 14 people with ease. Alternatively, for the ultimate convenience, our breast joints are quick to cook, boneless, easy to carve and come with a selection of stuffings and decorations.

If your guests prefer white meat, this is the option for you. Our deboned breasts come unstuffed or stuffed and wrapped in bacon in a foil tray, so they're oven-ready

Easy entertaining

With Christmas Food to Order, you get peace of mind that all your food shopping is taken care of, and you don’t have to worry about all that fiddly prep, leaving you extra time to work on the presentation of your food or simply enjoy the day

Prep for success

Make your gravy in advance and freeze until you need it. Finish on the day with turkey juices from the roasting tray

A tender turkey

When you take your bird out of the oven, spoon over some of the cooking juices to stop the skin shrinking and keep the breasts moist

On the side

Great sides make a meal. Add a spoonful of honey and a squeeze of orange juice to your parsnips before roasting, or sprinkle pomegranate seeds over sprouts

Love your leftovers

These crisp-on-the-outside, soft-in-the-middle filo Christmas crackers are the perfect way to use up leftover turkey. Serve with a glossy cranberry sauce as part of your Boxing Day buffet. If you’re opting for a whole bird, don’t forget to save the bones: they can be simmered down into a flavour-packed stock to make a nourishing soup that’s sure to keep the December chill at bay

A bit on the side

No succulent roast turkey would be complete without a generous spoonful of tangy cranberry sauce. Make your own this year with our easy recipe, which is given a boost with a grating of zingy orange zest. If you’re short on time, this could easily be made ahead and kept in the freezer until Christmas Eve
