What’s in season in March

Best in season: March
Finally, lighter days and brighter skies herald the start of March and there’s plenty to get excited about. Think the very first British asparagus, Jersey Royal potatoes and spring greens, plus chocolate-brown Adora tomatoes from Spain and lovely savoy cabbage, cooked in plenty of butter and served with my Mother’s Day brunch potato cakes. Make use of English Bramley apples too, in my blackberry and apple crumble – Mum will love it. Here’s some recipe inspiration to get you in the kitchen.
Savoy cabbage
With its crinkly, dark-green leaves, savoy cabbage adds gorgeous depth and savouriness to all sorts of my favourite winter dishes, like soups and stews. As their leaves are slightly hardier than their red and white cousins, roll them up into a cigar shape and slice them very finely before stirring them in. They’re great as a side in their own right too, charred until smoky, then cooked in plenty of butter and chicken stock for a silky, rich side – try my herby roast chicken and cauliflower with charred savoy cabbage recipe this Mother’s Day. Alternatively, treat Mum to breakfast in bed – my cheesy brunch potato cakes, championing buttery savoy cabbage, spring onions and cheddar, are served with crispy bacon and eggs. She’ll love it.
Adora tomatoes
Grown and harvested by hand in southern Spain, chocolate-brown Adora tomatoes have the perfect balance of sweetness and acidity. As we don’t get ripe tomatoes in the UK until the summer, these are a fantastic substitute in the meantime. Try them sliced up, topped with a little sea salt and olive oil and enjoyed very simply on toasted sourdough – if you can get hold of fresh sardines, then my sardines on toast is a must. Alternatively, amplify their sweetness and pair them with creamy ricotta, as in this fantastic slow-roasted winter tomatoes and ricotta recipe from the M&S Food team.
Spring onions
Spring onions' mild flavour make them a fantastic garnish on aromatic rice dishes, like my teriyaki chicken drumsticks with egg-fried rice – slice them very finely lengthways into ribbons and they'll really look the part. As they're milder and more delicate in flavour than regular onions, they're great used as a punchy garnish for salads and stir-fries or this cheese toastie from the M&S Food Team.
Maris Piper potatoes
We might be reaching the end of root-veg season, but the humble spud is still going strong. What better way to champion Maris Pipers, with their floury, creamy texture, than to turn them into my game-changer roast potatoes or fluffy mash. A cracking all-rounder, Maris Pipers will work well in my warm haddock fish cakes too, with dill, lemon and fennel for properly fresh, springtime flavours.
Brown onions
Lending a natural sweetness and subtle aromatic flavour to gravies and curries, stews and soups, the humble brown onion is an often overlooked seasonal hero. M&S onions are harvested from trusted M&S Select Farms for their robust flavour, each carefully selected to make sure they’re the best quality and freshness possible. Try slow-roasting this seasonal onion in this Middle Eastern-inspired roasted cauliflower recipe until deliciously sweet and soft – paired with robust spices and smoky cauliflower, it’s a dream dish!
Chestnut mushrooms
Full of earthy, nutty flavours, M&S British chestnut mushrooms are enriched with vitamin B6. They will lend a meaty, umami note to all sorts of dishes, so give some of these recipes from the M&S Food team a go. Try a rich mushroom truffle butter linguine, a hearty cavolo nero, gruyere and mushroom pie, or a hearty chicken and mushroom stroganoff.
