What is prosecco?

Prosecco is an Italian sparkling wine, hailing from the hills of the northeast in the Veneto and Friuli-Venezia Giulia regions. “The really special thing about Italy is the diversity and sheer number of grape varieties that are local and specific to their region,” says M&S senior buyer Dror Nativ, who only works with trusted wineries to source top-quality Prosecco for our Foodhalls.

Prosecco is a great crowd-pleaser thanks to its light, easy-to-drink bubbles and crisp flavour profile. “It’s all about the lively, fruity, floral characters,” says wine specialist technical manager, Sue Daniels. “It’s instantly appealing, and has a lovely, tingly mousse that’s so refreshing. It’s a great summer drink if you’re looking for something that goes with picky bits.”

How is prosecco made?

White Glera grapes undergo a traditional white wine vinification, with the first fermentation taking place inside stainless steel vats at controlled temperatures. Unlike Champagne, Prosecco is fermented a second time inside low-temperature pressure tanks.

“Within three to four months of harvest, you can get Prosecco on the shelf. It's very fresh and retains its vibrant primary fruit flavours, rather than the biscuity, brioche flavours you get in Champagne,” says Dror.

How to serve prosecco

Make sure to chill your prosecco properly, ideally between 6 and 8°C. Serve in a stemmed glass, like a Champagne flute, a coupe glass, or a white wine glass – check out our advice on choosing glassware.
