Preheat the oven to 180°C/160°C fan/gas mark 4. Line a large baking tray with greaseproof paper.

In a large bowl, mix the milled flaxseeds (2 tbsp) with the boiling water (100 ml). Set aside for 5 minutes.

Bring a pan of water to a boil and cook the British petit pois (300 g) for 2-3 minutes until just tender and vibrant green. Drain and immediately refresh under cold water to keep them bright.

Add the light rye flour (2 tbsp), sea salt (1/2 tsp), seed mix (120 g) and sesame seeds (40 g) to the bowl. Stir well with a wooden spoon to form a rough dough.

Transfer to the prepared tray and, using a spatula, spread the dough as thin as possible (aim for 3-4mm). Pop into the oven and bake for 45-50 minutes, until crisp and golden at the edges.

Meanwhile, add the petit pois, feta (200 g), lemon juice and zest (1), mint (25 g), chilli flakes (1/2 tsp) and yogurt (70 g) to a blender and blitz until smooth. Season to taste with salt and pepper. Spoon into a bowls and drizzle with olive oil.

Allow the crackers to cool completely on the tray – they'll crisp up further as they cool – then break into shards and serve with the dip.
