Where we source our Parmesan

Our exceptional Parmesan hails from a single dairy in Emilia-Romagna, Northern Italy. Head Cheesemaker Pasquale Aversa has been producing it there for almost 14 years. Carefully sourced milk from just three surrounding farms, delivered fresh in the morning, helps give this cheese its creamy texture and exceptional flavour – nutty, tangy and acidic. The Canossa dairy is 70 years old, and has been producing Parmigiano Reggiano cheese for M&S since 2011.

Creamy Parmesan spaghettoni

Creamy and cheesy, this pasta dish will go down a treat with the whole family. Tom Kerridge creates a silky smooth sauce using grated Parmigiano Reggiano, cream, garlic, and a generous knob of Collection Farmhouse Butter. Toss with thick spaghettoni and top with crunchy pieces of baked Parmesan.

Crispy Parmesan potatoes with blue cheese ranch

Whether you’re serving as a starter or a side dish, these crispy smashed potatoes are a real crowd pleaser. Use our buttery Jersey Royal Potatoes or any small potato and boil until softened, then smash with the bottom of a mug. A scattering of Parmesan makes these extra crispy. Serve with a tangy blue cheese ranch dipping sauce.

Lemony leek and petit pois pasta with ricotta

This speedy dinner comes together in just 15 minutes and uses shortcut frozen prepared veg. Cook our Petit Pois, Peas, and Leeks blend in a frying pan, then mix with creamy ricotta cheese, a pinch of lemon zest, and a handful of Parmesan. Toss with messicani pasta and add a splash of pasta water for a glossy sauce.
