Types of cheddar
Cheddar can vary in flavour and texture depending on where it's made and how long it's aged for, from milder family-friendly varieties to rich, robust aged cheddar.
Mild cheddar – has a delicate, subtle flavour and a creamy texture - ideal for sandwiches or adding to sauces when you don't want as much of a punch.
Medium cheddar – with a balanced, mellow flavour, mild cheddar is a great all-rounder. Use to top a veggie gratin or add body to a pasta bake.
Mature cheddar – this cheddar has a rich, savoury flavour and crumbly texture – grate over mac and cheese or use in savoury scones.
Extra mature cheddar – aged for longer, more mature cheddars are allowed time to develop deeply complex flavours. Add to a cheeseboard or use to make rarebit.
Aged cheddar – vintage cheddars have a powerful, robust flavour due to being traditionally aged. Use when you want a cheese that packs a punch.
High protein cheddar – if you're looking for a lower-fat, lighter, high-protein option with all the savoury cheddar flavours, this is for you.
Smoked cheddar – traditionally aged then smoked over oak wood, this has a rich, smoky flavour - great for adding depth to cheese sauce.
