Preheat the oven to 200°C/180°C fan/gas mark 6. Line a large roasting tray with foil.

Add the chicken mince (1 pack) to a mixing bowl and stir through the shawarma marinade (1 pack). Mix well with clean hands, then shape into 20 meatballs. Place on one side of the tray and drizzle with a little olive oil.

Add the potato wedges (5) and sliced pepper (2) to the other side of the tray. Toss with 1 tbsp olive oil. Roast for 20 minutes.

Add the quartered pittas (4) to the tray, toss everything together and roast for a further 10 minutes until the meatballs are cooked through and the pittas are crisp at the edges.

Meanwhile, add the cherry tomatoes (200 g), cucumber (1) and red onion (1/2) to a bowl. Squeeze over the juice of half the lemon (1/2) and season with salt and pepper. Mix well and set aside.

In another bowl, stir together the yogurt (100 g), garlic (1 clove) and remaining lemon juice (1/2). Season to taste with salt and pepper.

Once the meatballs are cooked, spoon over the tomato salad, drizzle with the garlic yogurt and finish with a few pepperoncini pickles (as needed).
