Heat a large, lidded frying pan or skillet over a medium heat. Add the olive oil (1 tbsp) and the sausages (1 pack). Cook for 15 minutes, turning occasionally, until golden all over. Remove from the pan and set aside.

Add the onion (1), red pepper (1), green pepper (1) and sweetcorn (1 tin) to the pan and cook for 4-5 minutes, until softened, then stir in the Cajun seasoning (3 tbsp).

Slice the sausages into thick coins and return them to the pan. Stir through the rice (200 g), then add the stock pot (1), water (350 ml) and chopped tomatoes (1/2 tin). Season well.

Cover with a lid and simmer gently for 25-30 minutes, until the rice is tender and the liquid has been absorbed.

Remove from the heat, fluff the rice with a fork and scatter over the spring onions (4) to serve.
