Blend the strawberries (250 g), mint (5 g), lemon juice (1/2), and honey (1 tbsp) until smooth. Taste and adjust sweetness if needed.

In a bowl, mix the yogurt (150 g) and vanilla (1/2 tsp) until smooth and slightly pourable.

Spoon a layer of strawberry mixture into each ice lolly mould, followed by a layer of layer of yogurt. Repeat layers until all 6 moulds are full.

Insert ice lolly sticks and freeze for at least 4-6 hours, or until solid.

Run moulds briefly under warm water to release.
