Rinse the rice (250 g) under cold water until the water runs clear. Add the rice to a large pan of salted water and bring to the boil. Cover, reduce to a simmer and cook for 15-18 minutes, until the rice is tender, and then drain.

Heat a large frying pan or wok over medium-high heat. Add a glug of neutral oil followed by the beef mince (1 pack). Cook, without breaking up, for 7-8 minutes, until you have a crisp golden-brown layer. Break up the mince with a spoon.

Add in the pepper (1), garlic (2 cloves), green beans (200 g) and Thai basil (25 g) and cook for 5 minutes. Add the nuoc cham dipping sauce (150 ml), soy sauce (1 tbsp) and cornflour (2 tsp), stirring for 3 minutes, until the beef mince is cooked through and the sauce is sticky.

Meanwhile, heat another frying pan over medium-high heat with 2 tbsp of vegetable oil (2 tbsp). Once hot, crack in the eggs (4) and cook until nice and crispy and the yolks are cooked through. Season with salt and pepper.

Spoon the rice into bowls and top with the Thai basil beef and fried egg.
