Preheat the oven to 200°C/180°C fan/gas mark 6.

Whisk together the teriyaki sauce (100 g), orange juice (1) and sesame oil (1 tbsp).

Cut out 4 large squares of aluminium foil (30cm square each) and brush each with a little bit of sesame oil.

Pop a handful of the stir fry mix (1 pack) into the centre of each foil square and top with the salmon fillets (1 pack). Fold the edges of the foil up slightly, then spoon the sauce evenly across the four pieces of salmon in the parcels. Top with the sliced spring onions (2).

Fold the edges of the aluminium foil over itself to seal the salmon parcels and pop onto a large baking tray.

Bake for 18-20 minutes, until the salmon is cooked through.

Meanwhile, add the rice (200 g) to a small saucepan and rinse under cold water. Drain and then refill with 400ml of water and add a pinch of salt. Bring to a boil, cover and then reduce to a simmer for 10-12 minutes, until the water is absorbed and the rice is cooked.

Remove from the heat and allow to steam with the lid on until you are ready to serve.
