Make the ice cream the night before you want to serve. Place 2 hot cross buns (2) in a shallow bowl, then pour over the double cream (600 ml) and leave to soak for 30 minutes.

Remove the hot cross buns and set aside. Add the infused double cream to a large bowl and whisk together with the condensed milk (1 tin), vanilla extract (2 tsp), ground cinnamon (1/4 tsp) and nutmeg (1/8 tsp) until it forms soft peaks and has a texture similar to clotted cream.

Cut the hot cross buns into bite-sized pieces, then add the butter (15 g) to a medium-sized frying pan over a medium-low heat, add the hot cross buns and sprinkle over the brown sugar (1 tbsp) and toast on the hob for 4-5 minutes.

Fold the toasted hot cross buns through the ice cream mix. Leave in the freezer for at least 6 hours.

Remove from the freezer 10 minutes prior to serving to let the ice cream soften a little bit. Toast the remaining hot cross buns (1 pack) and use a cookie cutter to cut 4 rounds of ice cream. Serve the ice cream in the hot cross buns.
