Based in the valley of the same name near Verona, it makes this classic, bespoke Valpolicella Ripasso for M&S. Using mainly local varieties, Corvina, Rondinella and Corvinone the wine is made in part with the dried grape skins used to make Amarone. This “repassing” gives it extra layers of depth and flavour.
