To make a rhubarb cosmopolitan, muddle five raspberries in a cocktail shaker, add 50ml M&S rhubarb gin, 1 tbsp lime juice and 20ml M&S apple, raspberry and rhubarb juice. Shake, double strain and pour into a cocktail glass, then garnish with lime.
If your mum loves fizz, try our refreshing prosecco mule idea. Add a shot of vodka, a shot of lime juice and 2 shots of ginger beer to a tall glass. Top up with prosecco, then garnish with lime and mint.

End your Mother’s Day feast on the sweetest note with this recipe – best-in-season rhubarb is poached in gin and orange zest, then used to top a creamy custard tart.
Ingredients (serves 8, generously)
For the tart:

1. Preheat the oven to 180°C/160°C fan/gas mark 4.
2. In a saucepan, bring the cream, milk and vanilla pod to the boil.
3. In a bowl, beat the egg yolks with the sugar until pale, then pour over the hot milk and cream, beating as you go. Strain into a jug.
4. Pour the custard into the pastry case and bake for around 30 minutes or until the custard has set.
5. While the tart is cooking, place the rhubarb in a saucepan with the sugar, the gin, most of the orange zest and 2tbsp water. Simmer for 10 minutes until the rhubarb is cooked but still holds its shape.
6. Remove the tart from the oven and top with the rhubarb, the cooking syrup and some extra orange zest.
