Add the butter (30 g) to a 20cm non-stick frying pan over a medium heat and stir until melted.

Put the flour (150 g), milk (325 ml) and egg (1) in a blender and blitz until smooth.

Pour the mixture into a jug, then stir through the melted butter.

Reheat the frying pan over a medium heat and lightly grease with sunflower oil. Once hot, pour in one-sixth of the batter, swirling it around the pan to coat the base.

Cook for 2–3 minutes on each side, or until the crêpe is opaque and bubbles appear on the surface. Flip carefully with a spatula and cook for another 2 minutes until golden brown.

Keep the crêpes on a plate under a damp tea towel while you make the rest.

Serve simply with lemon and sugar, or spread with your favourite spread.
