Preheat the grill to medium.

Shred the chicken breasts (2) with two forks and add to a large bowl.

Stir in the Greek yogurt (6 tbsp), cottage cheese (2 tbsp), sumac (1 tsp), preserved lemon (1), red onion (1/2) and dried tomatoes (2 tbsp). Season to taste with salt and pepper.

Halve the bagels (4) and toast under the grill for 2 minutes on each side, or until golden brown.

Fill the bagels with the chicken mix and spinach (50 g).
