Cut the potatoes (2 kg) into 4cm chunks and add to a pan of salted cold water. Bring to the boil, then reduce the heat to a simmer and cook for 10 minutes, until just cooked through. Drain and allow to cool completely.

Preheat the oven to 220°C/200°C fan/gas mark 7. Add the oil (3 tbsp) to a large roasting dish and place in the oven to heat up for 5 minutes.

Carefully remove the hot oil from the oven and add the potatoes. Season with salt and pepper, then roast for 35 minutes.

Remove the potatoes from the oven. Turn with a spatula. Slice the butter (100 g) into rounds and place it in the tray with the potatoes, along with the fresh sage leaves (10 g).

Return to the oven for a further 10-15 minutes, until cooked through and gorgeously golden brown.
