To make the potatoes, place the potatoes (500 g) in an air fryer and drizzle with olive oil. Season with flaky sea salt. Cook at 180°C for 15-20 minutes, shaking halfway, until golden and cooked through.

Allow to cool slightly, then score a cross in each potato and gently open up. Fill each with 1-2 tsp sour cream dip (1 tub) and scatter with the fresh chives (5 g).

To make the martini, chill four martini glasses in the freezer. Stir 120ml vodka (240 ml), 2 tbsp vermouth (4 tbsp) and a small handful of ice in a cocktail shaker and shake to combine. Strain into two martini glasses and serve with a twist of lemon peel (1). Repeat with the remaining vodka and vermouth to make two more martinis.
