Preheat the oven to 200°C/180°C fan/gas mark 6. Combine the pancake mix (1 box) with 300ml water in a large jug and whisk thoroughly to combine.

Line a 23cm square deep baking tray with greaseproof paper. Pour the pancake mix into the tray, then scatter with half the raspberries (100 g), blueberries (75 g), blackberries (75 g) and strawberries (150 g).

Bake for 12-14 minutes, until risen, lightly golden and firm to the touch.

Meanwhile, mix the orange zest (1) into the clotted cream (4 tbsp).

Meanwhile, combine the remaining berries in a bowl and combine with the juice from the orange.

Serve the pancake traybake, cut into squares, with the orange clotted cream, fresh berries and a drizzle of maple syrup (3 tbsp).
