Preheat the oven to 220°C/200°C fan/gas mark 7. Add the cauliflower (1), pepper (1) and cashews (75 g) to a lined baking tray and roast for 15 minutes, until soft.

In a mixing bowl, mix the garlic (1 tsp), ginger (1 tsp), sesame oil (2 tbsp), hoisin sauce (4 tbsp), ponzu sauce (2 tbsp) and chilli flakes (1 tsp) together. When the time’s up on the cauliflower and pepper mixture, pour over the dressing, then continue to roast for another 10 minutes, until soft and sticky.

Meanwhile, cook the noodles (400 g) according to the packaging instructions.

Add the noodles to the tray and toss well to coat. Serve the noodles in bowls, topped with thinly sliced spring onions (2).
