Add the anchovy fillets (2) and ½ tbsp of butter (2 tbsp) to a saucepan over a medium-high heat. Once the butter has melted and the anchovies are dissolved, pour the melted butter mixture in a bowl with the remaining softened butter and whip together with a fork. Leave to one side.

Meanwhile, bring a small saucepan filled with hot water to a boil. Once boiling, carefully lower in the eggs (2) and cook for 6 minutes 30 seconds for soft-boiled (or cook for longer, if you’d like). Run the eggs under cold water and carefully peel their shells.

Add the red chicory (1 head) to the beans (1 pot) and mix through. Toast the bread (2 slices) and spread over as much anchovy butter as you’d like, then top with the beans, followed by the halved soft-boiled egg on each.

Season with salt and pepper, and scatter over the finely grated Parmigiano (20 g) to finish.
