Preheat the oven to 220°C/200°C fan/gas mark 7. Add the potatoes (1.2 kg) to a lined baking tray and toss with 1 tbsp of olive oil and a big pinch of salt. Roast for 30 minutes, until soft, golden and crisp, then set aside.

Meanwhile, add the meatballs (1 pack) and red onions (2) to a large roasting tin and toss with 1 tbsp of olive oil. Roast for 15 minutes, until the onions are soft and golden. Stir in the chopped tomatoes (1 tin), smokehouse tomato sauce (2 tbsp), smoked paprika (1 tbsp) and ground cumin (2 tsp). Return to the oven for another 10-12 minutes, until the sauce has reduced and the meatballs are cooked through. Season to taste with salt and pepper.

Top the potatoes with the beef meatballs and drizzle over the aioli (2 tbsp). Serve with the chopped parsley (25 g) scattered on top.
