Combine the shallots (1), tomatoes (280 g), butter beans (1 jar) and basil (25 g) in a large mixing bowl with a big pinch of salt.

Meanwhile, add the raisins (20 g), capers (1 tbsp), pine nuts (25 g), chilli flakes (1/2 tsp), honey (30 g), and vinegar (2 tbsp) to a saucepan with 50ml of water. Bring to a simmer and cook until thickened. Remove from the heat and allow to cool, then mix in 1 tbsp of extra virgin olive oil.

When you’re ready to serve, add the basil to the tomatoes. Serve on a platter, topped with the stracciatella (100 g). Dollop over the dressing to finish.
