Preheat the oven to 200°C/180°C fan/gas mark 6. Heat 2 tbsp olive oil in a large frying pan on a medium-high heat. Add the onions (1) and leeks (2) to the pan with a big pinch of salt. Sauté for 10 minutes, until soft and caramelised.

Add the spinach (400 g) and frozen peas (200 g) and continue to cook until the spinach is wilted. Remove from the heat and allow to cool slightly.

Once cool, mix through most of the beaten eggs (4), all the feta (200 g), herby feta dip (170 g), grated Italian hard cheese (50 g) and parsley (25 g). Season with salt and pepper to taste.

Add to a large ovenproof dish, and top with the puff pastry (320 g). Brush the top with the remaining beaten egg, and scatter over the za'atar (2 tbsp). Bake for 35-40 minutes, until golden brown.
