Add the feta (200 g) to a mixing bowl and toss with the honey (1 tbsp), lemon juice, zest (1), olive oil (3 tbsp), ancho chilli flakes (1 tsp) and dried oregano (1 tsp). Leave to marinate for at least 20 minutes.

Add the melon (1), cucumber (3) and mint (15 g) to a large platter or serving bowl. Pour over the feta and all the marinating juices and toss together. Sprinkle over the black sesame seeds (2 tsp), and drizzle over a bit more honey, if you’d like, then tuck in.
