Add the extra virgin olive oil (3 tbsp), apple cider vinegar (2 tbsp), wholegrain mustard (1 tsp) and lemon juice (1) to a jam jar along with ½ tsp salt and a good grind of black pepper and shake to combine.

Preheat the oven to 180°C fan. Arrange the apples (2) and pears (2) on a parchment-lined baking sheet and drizzle over the honey (2 tbsp). Bake for 15-20 minutes, until soft and caramelised.

Remove the tough inner cores from the chicory (2 heads) and spread out the leaves on a big platter. Top with the sticky apple and pears, crumble over the gorgonzola (200 g) then scatter with the pecans (1 handful). Finish by drizzling over the dressing.
