Heat a splash of oil in a large frying pan or wok over a medium-high heat. Tear the larger mushrooms (1 pack) in half then add to the pan with the spring onion (1 bunch) and ginger (1 tsp). Cook, tossing and stirring now and again, until the mushrooms are a deep golden brown.

Stir in the stir fry sauce (1 jar). Add a splash of water to the empty jar, shake with the lid on, and add this to the pan.

Meanwhile, cook the noodles (2 nests) in boiling water according to the pack instructions. Add the pak choi (1 pack) for the last minute of cooking.

Use tongs to add the hot noodles and pak choi to the sauce, tossing until glossy. Spoon into bowls and serve with the sesame seeds (1 tsp) on top.
