Green bean, marinated feta and giant couscous salad

This summery vegetarian dish makes the most of best-in-season British green beans. Marinating the feta not only means it will last longer, it also adds more punchy flavours. Serve as a side alongside a bigger spread or pack up and take on a picnic.

step 1
To make the marinated feta, crumble the M&S barrel-aged Greek feta (200 g) into a bowl. Pour over the olive oil (150 ml) to cover then peel thin strips of zest from the lemon and add these, the M&S green and red pickled chillies (2), the fresh oregano (1 handful) and the M&S nonpareilles capers (2 tsp). Set aside (you can prep this ahead and store in a jar in the fridge).
step 2
Bring the vegetable stock (750 ml) to the boil and add the wholewheat giant couscous (175 g). Cover and steam for 6-8 minutes, until tender, adding the M&S Remarksable Value green beans (200 g) for the last 4 minutes.
step 3
Drain the couscous and toss with the flat leaf parsley (1 handful), M&S Remarksable Value lemon (1) juice and M&S sherry vinegar (1 tbsp).
step 4
Spread the M&S creamy harissa and olive oil dip (1 jar) over a serving platter. Spoon over the couscous and beans, then finish with some of the marinated feta and its flavoured oil. Save the rest of the feta in the fridge to add to salads or serve with M&S Greek style flatbreads (as needed).
step 4 Spread the M&S creamy harissa and olive oil dip (1 jar) over a serving platter. Spoon over the couscous and beans, then finish with some of the marinated feta and its flavoured oil. Save the rest of the feta in the fridge to add to salads or serve with M&S Greek style flatbreads (as needed).
