Preheat the oven to 200°C/180°C fan.

Place the onions (2) and potatoes (500 g) into a large roasting tray, add a splash of olive oil and season, if you don't have a tray big enough to fit everything, split across two smaller roasting trays. Roast for 15 minutes, then increase oven temp to 220°C/200°C fan.

Spoon the pesto (1 jar) into a small bowl and mix in a splash of olive oil to create a dressing.

Take the tray out of the oven and tip in the cauliflower (1), peppers (3), courgettes (2) and chickpeas (1 tin). Add the pesto dressing along with some seasoning and stir well to coat. Put the tray back into the oven for 15-20 minutes, stirring halfway, until all the vegetables are tender.

Serve the traybake as it is, or with crusty bread or feta, if you have some.
